Just wondering if there was a versatile, cheap material I could use for chassis and armour that is sold in large sheets. I know some metals can cost a fortune so I was thinking some sort of Fibreglass but I havn't found any suppliers.

Most people tend to use HDPE, nylon or a similar plastic in the thickness of between 12-20mm for the chassies and thinner pieces of it for armor in some cases.
I myself have gotten some HDPE 300, 15mm thick which was quite cheap and easily worked with using either an electric power saw or even a hand held one.

yes i have some ikea chopping boards, they are good. you could also use rg1000 which is like uhmwpe but half the cost:http://www.directplasticsonline.co.uk/RG1000_Sheet.html
