May seem an obvious point but something that's often overlooked when discussing ESCs is a nice clean proportional response. I've found a number of the cheap Chinese ESCs (as well as some servo boards) are a bit 'all or nothing'; soon as you move the stick out of the dead band, the RMS voltage jumps...
