I'm still a bit on the fence about it. 2s is easier; you don't need a voltage reg, you motors will run cooler, you'll consume less current, you need less weight/space for the batteries. And the extra power is usually wasted because it's almost impossible to stall a Pololu HP in an ant.

That said, This version of Void runs 3s on 30:1s on 18mm wheels, and I really enjoy driving it. To get that same speed on 2s I'd need to go up to 26mm wheels which is a lot larger and I generally like to make my wheels as small as possible, partly so they take up minimal space, but also so that the rearmost contact point on the robot is as far back as possible.

So yeah, I dunno ¯\_(ツ)_/¯.

I used 3S in Skutter as the Beetle drive motor needs it, and it gives it a nice bit of extra speed to the drive. There are a few cases which can justify 3s (such as Void and Skutter), however almost all designs can be done with 2s if designed correctly. All my spinners are 2S, as 3S seems to just be too powerful most of the time (which is coming from the guy with Bad Idea :L )

I might be interested in a couple of the built-in gyro boards; however I might be the only person who doesn't use Lemons so I'm hoping they aren't required to be used?

I'm likely to sell them with a lemon already attached as they are designed specifically to fit a Lemon. Theoretically could use something else, but wouldn't be ideal..

If they come with a Lemon I might be tempted, as much as I like soldering my own odd speedo/reciever combos :)

If I'm plugging an ESC for my EDF into the TinyTwo, do I need to cut the red power line that'd normally power a servo or do I leave that intact?

The regulated 5-6v supply that a component feeds back to the receiver comes from what is known as a BEC - or battery elimination circuit. You only want to have one active BEC feeding back into the receiver in your system. So if your receiver already has power from the TinyTwo, then yes, you'll want to disconnect the red wire from the 3-pin connector from the ESC to the RX.
