I don't wan't to steal business away from anyone but I have a cheaper suggestion for speed controllers.
Don't worry about that Oliver one of the main reasons for me making them was to give people a choice. I have in the past used servo electronics namely in one of the early Mutants and that won an AWS.

A few grams. It is dependent on which servos you get them out of i.e. if you are taking the one out of the TP 9g servo it is going to be lighter than the one out of a, say, Hitec HS-322 servo.
The old Futaba S3003 servo boards are generally good for around 1amp loads and can handle 9v. They are a little big in size though (25x15x5). I used a pair of them in a super antweight about 6 years ago with no issues (However, no real combat either!).
Even if you solder resistors onto the servo boards, some might not even be in the neutral point where the motors dosent move. I have encountered servo pots that uses higher Ohm then regular servos.
With special made ESC you dont have to worry about trimming or adjusting the pot all the time.
